I made these last night when I did my meal prep for the week and then I ran all morning so I didn't get to eat one until the afternoon and verdict is....DELICIOUS!
On to the important part... how to make it!
Last summer (I think...maybe it was 2 summers ago already!) I posted a recipe for a chicken orzo salad that I LOVE. Since then I have decided to go meatless, plant-based, vegetarian, whatever you'd like to call it (which I still haven't really posted about here...) so I am working on adapting all of my normal meals to be meatless. This one came out bomb.
Here is my slightly altered recipe to make the vegetarian version of my orzo salad
I decided last weekend that I wanted to try out some vegan meals so I decided I would do Meatless Monday for a little while. I didn't actually take the time to meal plan this week, so that made it a little bit more difficult for me at the grocery store. When I went shopping I just grabbed a bunch of stuff I thought would work well in a meatless chili....and SUCCESS!
