I have made this a few times now and the only time I screwed it up is when my chicken went bad...
That went straight into the trash!
This is a really tasty pasta salad and with the chicken, it's filling enough for dinner. I love light meals like this that you can enjoy even when it is hot out during summer. Every time I make it I am amazed at how good the dressing tastes for so few ingredients!
Last time I made this was especially exciting because I used a cucumber from my garden!
For the dressing:
Cut up the chicken. Sprinkle with salt, pepper and garlic powder. Warm the oil olive in your skillet. Add the chicken and cook until browned.
Meanwhile, cook the orzo in boiling water until tender. Strain and transfer to a large bowl. Add cooked chicken, diced green and red peppers and 1/3 cup olive oil.
Whisk together the lemon juice, olive oil, salt, and pepper to prepare the dressing and pour it on the pasta and vegetables while it's still warm. Let the mixture cool to room temperature, then add the cucumber, green onion and feta. Serve at room temperature.
