I decided last weekend that I wanted to try out some vegan meals so I decided I would do Meatless Monday for a little while. I didn't actually take the time to meal plan this week, so that made it a little bit more difficult for me at the grocery store. When I went shopping I just grabbed a bunch of stuff I thought would work well in a meatless chili....and SUCCESS!
I have had this quinoa sitting in the pantry for probably a year now because I'm not a huge fan of eating it as a plain side, but I have used it in chili once before and it was a great way to trick myself into eating it.
I also already had some frozen corn so I used that as well. Those pouches of beans are something I've never seen before, but I really like them! A whole can is usually too many for me and I never seem to buy dried beans. I found them at Hannaford in the organic/natural section if you are looking for them :)
This is why I love crockpots...dump stuff in and leave it alone! All I had to do was cut up a few red potatoes, dump it all in there and let it sit.
After a few hours I gave it a taste test and it was a little...blahhh. This is when I realized I never added any seasoning or anything! So I added some of the salsa below that I had in the fridge and YUM!
This isn't quite a recipe, but since it's just dumping into the crockpot I think this should help you make a yummy meatless chili!
